I presume this was because i overloaded the server, but my question is...is
there a way to delete more than one at a time from 'queues' in the exchange.
ie highlight all of them and delete???

It may also be the receiving system throttling you.
Large providers like Hotmail, AOL, etc. will throttle you if they suspect a
bulk email in progress. That's one more reason why Exchange makes a terrible
bulk email system.
Anyhow in Exchange 2003 if you really cant wait for the messages to
eventually go or NDR, you could stop the SMTP service, then manually delete
the messages out of the  /queue folder. Its probably somewhere like
C:\Program Files\Exchsrvr\Mailroot\vsi 1\Queue
But as I said, the messages will eventually time out and disappear on their
own.
