Outbound mail from new E2K7 server

I have an Exchange 2003 server and am standing up a new Exchange 2007 server.
The new server seems to play very well with the 2003 server.  Outbound mail
from the 2007 server go out through the 2003 server.  Here's where I'm kind
of confused.  Once I get all my mailboxes moved over to the new 2007 server,
how do I get it to send mail out on its own?

Create a send connector to the internet. Make the 2007 server the
source server.

You know, I looked at that and wondered if that's all I have to do.  I assume
that I can just change the current send connector and instead of the source
being to old server, change the source to the new server, correct?  I'm sorry
for how stupid this was, but I'm just learning my way around 2007 - boy is it
different.

I would create a new 2007 send connector, add the 2007 server as the
source server and delete the 2003 SMTP connector. All the messages
to/from the 2003 side will go through the RGCs.
