Use AD Users and Computers.
Create a Mail Enabled AD Contact and enter the external email address
when you create it.
Go to the Exchange General | Delivery Options on the properties of the
user and enter the contact as the alternate recipient.

Yes, the mail enabled contact will be given an SMTP address, by you,
when you create it.

Hey Mark, sorry to keep bothering you. I just tried finished creating the
contact and got an error message that "An attempt was made to add an object
to the directory with a name that is already in use. I didn't mention this,
but the email is being forwarded to a different email account of an existing
user.
I guess i just could use a ficticious name and enter the correct email
address?

It's probably trying to create the contact with the same alias
(everything exchange related gets an alias.
When you see the alias field, put .external or something obvious at
the end. It has no bearing on the display name or anything important
to you.

I tried the .external for the alias and got the same result. I am going to
change try to change the name and see what happens.
