Can someone just point me in the right direction of what should be backed up
for an Exchange folder, aside from the obvious (Mailboxes, etc..) and what
the proper recovery procedures are?

BTW, Exchange 2003 & 2000

You should have a Microsoft Exchange aware backup program and backup the
mailbox and public folder stores.
You should not run a file level backup against any of the folders under the
exchsrvr folder.

Have a look at the Disaster Recovery for Exchange 2000 and Mailbox Recovery
for Exchange 2000 on

and Disaster Recovery section under
http://www.microsoft.com/technet/prodtechnol/exchange/2003/library/default.mspx
