Uninstalling first Exchange

I am in the process of removing the first Exchange server from our
Domain/Forest.  It was a 5.5 server and is now a 2003 server.  I built a
second server, but when I stopped the Exchange services and IIS services on
the first machine, I noticed some mail sent from a public folder to a
distribution list, was not being delivered right away.  I noticed the IIS and
smtp service had restarted on the first machine.

When I checked public folder replication, I noticed the highest level still
has both Exchange servers, but I can't remove replication from this folder. 
All subfolders have had replication turned off, and only going to the new
server.  How can I completey remove the first server?
