I want to be able to track when a user connects to their mailbox. I have
someone who is trying to connect to other mailboxes and I want this to be log
in the event log. I would like to show the user name and the mailbox they
tried to connect to in the same event. Is there a way to do this?

You need to turn on diagnostics logging.  Look on the properties of the
Exchange server, Diagnostics Logging property page, look at the
MSExchange -> Mailbox service and enable (Minimum) the Logons category.
That should fix you up.
