Plain Text and HTML

When we receive an e-mail via HTML text and send a reply our signature is
double spaced and everything else seems double spaced. When we receive the
plain text items everything is fine. Is it the format of the sender or the
recipient?

A combination of the two. You might want to ask the Outlook groups for
some best practice here as it's a client side issue, unless of course
you want to stop HTML mails coming in, period.
