Is there a way to globally setup exchange to automatically purge the deleted
items in each person's account either when the exit outlook or on a time
basis.  I have outlook setup to prompt users if they want to delete their
items but many people cancel this or turn it off.

Also,

Is there a way to see from the exchange server just how much space each
person's deleted items is taking?

Yes, you can use mailbox manager policies for this - however I've heard that
it may cause users problems when they want to use 'recover deleted items'. I
usually just assign mailbox quotas and make the users manage their own
mailboxes - they'll eventually have to do something! I also tell them that
if they want to store stuff in the trash, that they shouldn't get surprised
or complain if someone sensibly *empties* their trash.

In ESM, where you see the individual mailboxes...you can add Deleted Items
to the columns - but that shows you how much is stored because of DIRT, and
not the size of their individual folder.
