We you have a "functional" mailbox where many users have full mailbox access
to. If a user creates an Outlook profile and sends a mail from the
"functional" mailbox are there any possibilities to see who did it? We use
Exchange 2003 and Outlook 2003.

You could look at the event log on the server and see who was logged on to
the mailbox.  That won't be of much help if you have multiple people logged
on simultaneously, though, and it will won't show who specifically sent
messages.
