Identify servers using the Exchange Server for relaying mail

Hi Guys

I will shortly be changing the IP address of our Exchange 2003 Server,
however prior to doing this I would like to know if there is an easy way to
find out what servers in my environment are using the mail server as an SMTP
relay?

Is there some a quick way of finding this information without having to
trawl through logs?

You could monitor what hosts are connecting to your server's port 25.

What tool would you suggest would be best to monitor the connections? 
Network Monitor?

Network Monitor would be one, yes.  I can't say what tool would be best,
