If i logon to the exchange server as administrator I can see the users
mailbox, the size and the number of emails in it.

I have a user who has 1 email stuck in there that needs deleting, is ther
anyway I can see the individual emails so I can delete this 1 email.

In where?

No - you'd need to open up the mailbox in Outlook or OWA. Either as yourself
if you have permissions, or as the user.
